This bacon jalapeno poppers recipe gives you the perfect morning kickstart.

Ingredients

• 1 lb Italian Mild Sausage
• 8 oz cream cheese
• 1 cup shredded parmesan cheese
• 15 fresh jalapeno peppers (adjust based on need)
• 1 package of bacon

Instructions

1. Cook Italian sausage in a skillet in medium heat until browned.
2. In a bowl, combine the cooked sausage, cream cheese, and parmesan cheese
3. Wash and cut the top half off of each jalapeno pepper to leave room to stuff.
4. If you don’t want it too spicy, you can scoop out the inside of the poppers including the seeds. Remove the membrane as well and this will give you more of a mild taste.
5. Spoon in the sausage mixture into each jalapeno half.
6. Wrap bacon around each jalapeno bowl.
7. Arrange each stuffed halves onto a baking dish. Bake at 380 degrees until bacon is fully cooked. Serve

I recently found this pan at Target and it was seriously the best purchase ever. I use this pan because it drains the bacon while it is in the oven. This prevents the poppers from getting all soaked and soggy from the bacon fat. Therefore, keep in mind that this helps keep the shape of the poppers while cooking.

This bacon jalapeno poppers recipe was a huge hit at my house. It is so easy to make and it doesn’t require the use of too many ingredients. From a breakfast dish to a afternoon brunch, this recipe is sure to be a hit. I plan to make these again for the up coming Holidays as well. My family has already requested it. I recently stayed at the best affordable resort near the theme parks. Planning a trip for the family is always fun but can also be challenging.  I wanted a fun getaway to Orlando, FL but with a big family like mine we needed a family friendly resort right in the heart of all the fun. Although our stay was complimentary all opinions of my stay are my own.

The Wyndham Orlando Resort International Drive is located in International Drive.  If you aren’t familiar with this area, this is where all the fun is located.  Not only are you near all the fun theme parks but you are near all the amazing restaurants and attractions.  You are even a walking distance from The Wheel at ICON Park which is so fun to experience. This park is full of shops, restaurants, entertainment, The Wheel, Orlando StarFlyer, Madame Tussauds, and SEA LIFE Aquarium & Skeletons which is the Museum of Osteology. You can fill your day with experiencing this park alone.

If you are traveling by plane, you will see that you are only 12 miles from the airport as well.  Wyndham Orlando Resort International Drive had everything we were looking for.  The rooms were clean and spacious enough for our family of 5.  The room offered a flat screen tv, mini fridge, and high speed Wi-Fi. The lobby staff was so helpful in every possible way.  To say that I was pleased with this resort is an understatement.

They have 2 pools, a fitness center, and a huge courtyard. My girls had the freedom to run and play and honestly that is a plus in my book. It is truly a family friendly resort. The property also offers a Lobby Bar and their amazing Gatorville Poolside Bar & Grill which can be enjoyed pool side. 

The Wyndham Orlando Resort International Drive is the best affordable resort near the theme parks.  I do recommend you give them a call and book your next family trip with them.

St Augustine Staycation is a must! I recently visited St. Augustine and loved it. I have had this beautiful town in my bucket list for quite some time and I am so glad we finally made it there.

Where we Stayed

I always travel with my girls. So, picking a family-friendly hotel and location is very important to me. While in St. Augustine, I was given a complimentary stay at Tryp By Wyndham Sebastian Augustine. Although our stay was complimentary all opinions of my stay are my own. To start, the hotel is located close to all the cool attractions. That is a plus! The room came with a mini fridge, a microwave, a coffee maker, and a sofa bed. We even had 2 queen beds which is perfect for our family of 5 . The lobby has a mini grocery shop available. The hotel offers a breakfast buffet with so many food options! If you are looking for a great hotel for a St Augustine Staycation this hotel is my #1 pick.

What we did

Since this trip was a weekender, we didn’t get to explore everything. However, here is what we loved the most about our St Augustine Staycation:

Magnolia Avenue

Magnolia Avenue is a road that stretches less than a mile north and is located right outside of the Fountain of Youth.  It is known to be one of the most photographed streets in America by National Geographic. We obviously had to see it for ourselves. We just had to take pictures here!

Castillo de San Marcos⠀⠀⠀

We also visited the oldest masonry fort, Castillo de San Marcos in St. Augustine. I have never visited a fortress before and it is truly impressive. This structure is over 315 years old and so full of history. They currently hold canon firings and weaponry demonstrations. The girls were in awe the entire time!!

Ripleys Believe it or Not St. Augustine

We also made it to Ripley’s St. Augustine and had no idea that this is the original location. It is the only location that Robert Ripley himself had the chance to walk through. Pretty neat right! The girls sure had fun seeing all the strange things that can’t be found anywhere else in the world.

Old Jail

If you love learning about history then St Augustine’s Old Jail is your place to visit. This jail held violent criminals from 1891-1953. We took the tour during the day. However, they do have a night tour for a more spooky experience. This would be a great tour during Halloween!!

This beautiful town makes for a great St Augustine Staycation and I can’t wait to explore some more.
